Barbecued GarlicChicken
  3 lbs chicken thighs, skin on  
  3 Tabs garlic, (minced)  
  2 tsp salt  
  2 Tabs black peppercorns  
  cup fresh coriander, chopped  
  Tabs lime juice  
  cups Tomatoes, cherry, halved  
  ea green onion thinly sliced  
  1 Tabs fresh thyme chopped or 1 teaspoon dried  
 
     
  1. Chicken thighs, remove bones, if desired. Crush the garlic and fresh thyme  
  with salt into a smooth chunky past . add Coarse black pepper  
  2. Combine in a flat dish with the coriander, and lime juice. Rub the mixture  
  well into the chicken on all sides, cover and refrigerate overnight or at least  
  1-3 hour. BBQ chicken over glowing coals, turning about every 5 minutes, until chicken  
  is no longer pink and the skin is crisp. Garnish with tomatoes and green onions
